Day 25 .... and loving it!

Right now as I type this, at the end of the evening, I have another pork joint in the slow cooker for our Friday night dinner ... I may actually tire that slow cooker out at this rate if I am not careful.

I did some shopping today after work and stocked up on a few bits.  Managed to snag a pack of ready to eat just Prawns at a third of the usual price which I had and enjoyed with my salad for lunch when I got home afterwards.

 and just to update you about my egg boiler it is brilliant as I use it everyday in the evening to boil eggs for the next day then when they naturally cool I refrigerate them.  It's very convenient.  It makes perfect eggs for my purpose and then they are on hand when needed.

So these free range happy girls in my garden   ....

and they often end up on my plate like this, yum :)


At the supermarket I found 'Spoilt Pig' Bacon which is compliant so I will have that Sunday when I plan a cooked breakfast ... only at lunch time!

Day 24 ... Jelly roll

It's not food but it looks and sounds tasty.  I thought it was time I posted something less foody as my 30 days are coming to an end.  This is a fabric jelly roll from Moda as I am starting a new quilt.



This will keep me busy in the evenings and weekends.

Day 23 the biggest challenge ...

... is actually blogging everyday not the healthy new lifestyle choice ... although that took up a lot of time tonight because I cooked Salmon Fish cakes courtesy of the recipe book 'Well Fed 2'.

Once again though I missed taking the photo at the end, which is typical, but I did manage to get a few during the cooking process.

Here is some of the ingredients weighed and ready



and the completed mix ready to be chilled before forming into patties and cooking brushed with ghee.




They were a hit, especially for my Daughter who had second helpings.

Day 21 - Has it really been 3 weeks?

Happy Sunday.

Today I did a fairly substantial food shop and then made some Ghee.  I burnt it then made some more  ... but I pulled it off the second time.  Why is it that you watch something like a hawk and then the minute you walk into another room to get your raw carrot (my dog Murphy likes them too ;) ) your ghee burns ... doh!

Anyway here are the stages in the process



I slow cooked a big shoulder of lamb most of the day for our evening dinner.  It inevitably shrunk but tasted gorgeous.  This is how it started out with a few shallots around it, some infused garlic and a herb rub of rosemary.

Day 20


It's been quite a lazy day for me which I needed.  I spend all week rushing around and so today gave me some light relief.

Bizzy B was with his Dad today so I generally took it easy and I caught up with some paperwork, went through my e mails, watched a film and researched some recipes.... that kinda day.

I had the left over Pork for breakfast.  I used the stock that I drained out of the slow cooker (which I had chilled then separated the fat from it) and used this to fry the pork in.  When it heats up it turns back to liquids.  It was amazing.  The fact that this juice is in jelly format when chilled is great as it  is full of good protein which is good for us.  It's also really tasty. Who needs gloopy unhealthy gravy.

Day 19 ... Friday again

So, the pork turned out fab again.  It was a bigger joint this time so there's leftovers in the fridge for tomorrow.  Yum.

I also made another batch of Scotch eggs.  I used my egg boiler to get the eggs ready.


... and they turned out fab too.  They make amazing lunch box food which is handy when out and about.

Day 18 and look what's in the slow cooker ...

It's day 18 and I have a big Pork Shoulder joint in the slow cooker.  I am using the Italian Roast Pork Slow roasted recipe again from the blog The Clothes make the girl as it was so amazing last Friday.  I put it on this evening for tomorrow night.  I have it on low for now and then in the morning with turn the heat up to high so that by Friday night it will just fall apart.  Yum.



I had a hair cut today and my hairdresser commented on my skin and hair.  Yay, for Whole30.

Day 17

So much going on today so no time to stop much.  Although I have received my egg boiler and used it today so that helped me and it works a treat.  So, from now I am boiling eggs the night before and popping them in the fridge until we need them.  It really helps.

Day 16 - and I remembered the Scotch egg photo!

I won't have too much time today, tomorrow and Thursday to blog as lots on but I am still on this fab journey and enjoying every part.  I feel good inside and out and those sugar cravings are as good as gone. Good.

One of the most noticeable things is the fact that although Bizzy B dictates my sleep (when and how much etc) but when I do get some sleep, since Whole30, I have had more restful sleep and I am therefore feeling more refreshed the next morning even though I am managing on the same amount as before.  Amazing.

Day 15 ... Half way, oh Yeah!

Yes day 15 officially marks half way and I am actually loving it.

I am, however, very sorry that I forgot to photograph my lunch aka Scotch egg and salad as I totally got carried away and snaffled it before I remembered so I will try again tomorrow.

In work today there was a massive tray of bakery cakes that were delivered from the local bakery and of all places they were right on the end of my desk all morning.  I didn't need one and it didn't bother me either which was really amazing.  I could smell them and I can still appreciate the nice smell but it didn't make me want them or need them and I didn't feel bad for not being able to eat one either. 
One thing I really did enjoy though was watching and listening to other people coming and going with excuses and leaving with a cake.  I heard things like 'I shouldn't really but ...' and 'I'll start again tomorrow' and 'I've been good recently so ..' ha ha, honestly ... and it was the most entertaining part of my day and I was really pleased as I am no longer using one of those excuses, thank goodness, and try as they might the others couldn't persuade me to eat one either as I simply kept repeating 'I don't snack between meals' and I was the only one telling the truth!

Day 14 and I made Ghee and Scotch eggs!

It's Sunday again and therefore it's day 14.  I have successfully managed 14 clean days. It really is a journey of discovery for me - where food and in particular taste is concerned.  Salad is really tasting amazing and so is fruit .... never thought I'd say that.

I also made my first Ghee today from organic non salted butter.  I only made a small amount but it was pretty straight forward so I will make a bigger batch next time.

Day 13

It's the weekend and I was fortunate to have a restful night and lazy morning thanks to my partner who got up with Bizzy B during the night and in the morning.

After breakfast we went on a bit of a shop tour going to all the places collecting the recipe bits I needed to do some batch cooking tomorrow. I also tried to get an egg boiler, the plug in the wall kind, but I couldn't find any in the shops so it's on order now from Amazon.  I want to boil a batch of eggs easily (without supervision I mean) and then leave them in a bowl in the fridge for me and the family to eat.

My 'Well Fed 2' book still hasn't arrived but I am happy using recipes from the internet which is good.  Tonight's recipe was from nom nom paleo website which is an amazing and I also have the 'Nom nom paleo food for humans' book. The recipe is actually Sous Vide crispy chicken thighs but I don't have a Sous Vide (I wish) so I improvised and cooked the thighs in my slow cooker for a few hours and then finished them off in the frying pan with duck fat.  Yummy.  The family approved also.

Day 12, whoop, whoop



I am sat here feeling really happy, stuffed and satisfied.  It's been another great day.  It didn't start too well with an angry and upset Bizzy B but I got him to School on time and furthermore I got to work on time and I had a really lovely time supporting one of my colleagues who was snowed under with work.  That makes me feel satisfied ... knowing that what you have done helps someone considerably.  Anyway I had the slow cooker going all day and it made a really great recipe.  A Friday night treat and the whole family loved it.

The recipe was Italian Roast Pork and from The Clothes Make the Girl Blog.  I am spending a lot of time on that blog in the evenings when I can and I have a list of things I want to try and cook.  I have just ordered her recipe book too as she's written 'Well Fed' and 'Well Fed 2' both of which are best sellers.  I have 'Well Fed 2' on the way because 'Well Fed' was sold out.   I used a Pork Shoulder for my recipe, as recommended, as anything too lean would dry out.  I patted the joint dry with kitchen paper and rubbed herbs all over the outside and infused fresh garlic.  I placed it in the Slowcooker all day.  My joint was an experiment so was smaller than the recipe and therefore instead of cooking it for 16 hours I cooked it just during the day.  I love the aspect of cooking a joint in the slow cooker and using it as a counter top oven.  Genius.



Half way through cooking I poured the juices off and cooled them then just before serving scooped the separated fat on the top off and reheated the remaining jelly which nicely reduced to a delicious gravy.  In the end the meat was so tender and juicy it was falling apart and with the gravy on top was the best pork I have EVER tasted. I had to take my child to an appointment first thing and therefore had to make up the hours lost so I have been working all day.  What a week ... first the funeral and then this.  Is it the weekend yet?

Day 10 ...

I am doing a happy dance as I am officially one third of the way through the Whole30 and I am loving it.

I wish I could get the recommended 8 hours a night sleep but even without that I feel fantastic and I think that my skin is looking better ... or starting to.

Now is probably a good time to share some of my goals that I wanted to achieve on Day 0 before I started.

They were: -
  1. I want to be healthy. 
  2. I want to feel good on the inside and strong on the outside. I want to glide up flights of stairs and batter off coughs and colds.
  3.  I want to look healthy. I don't mean skinny or even remotely slim but I mean glowing skin, with beady eyes without tired grey circles and bags underneath. I want thick, luscious hair that shines and strong healthy growing fingernails. 
  4. I want to have the energy required to keep up with Bizzy B  - day and night.
  5.  I want to be the woman in the supermarket buying fresh seasonal ingredients and good foods. I don't want to buy any more foods in packets or containers because I want to make my own good food and I want to make it for my family. 
  6.  More than anything I want to give up Pepsi max. 
 So here were my clean food choices for Day 10: -

I am still wading through an enormously busy week here but secretly I am (or since I blogged about it I guess I am openly) pleased I am keeping afloat with all of the planning and shopping and all the preparation and cooking time.  Yay me. Next weekend I may have a go and do a 'cook off' as recommended by  The Clothes Make the Girl Blog where you pre plan and prepare base meals.  Sounds good to me.

Day 8, Officially in week 2

Busy, Busy day ... so that means sadly no food photos but I did stay clean all day.  This was despite eating breakfast in the car outside my sons School while waiting for it to open so I could drop him off and then I could dash into work early and work through my breaks/lunch so I could attend my Uncles Funeral in the afternoon to pay my respects ... and I didn't touch the buffet at the wake either and I stuck to only drinking still water!

Day 7, one week in ...

Thats a whole week complete and I am really enjoying the journey.  I picked a tough week to start - the first week back to work (and School) after an indulgent 2 week Christmas break. I also knew that the first 2 weeks were going to be busy but I am glad I am into it now.

My dog, who is recovering from an operation joined me today in my craft room.  She is a Mummy's girl!

 

Tomorrow will be hard and hectic.  Tomorrow I will be working and then going straight to a funeral as sadly my Uncle passed away on New Years Eve. I have prepared some bits to help me eat clean and I will update you tomorrow.

Day 6, Saturday

I had to get up and dressed early today (for a Saturday) to get to an appointment at the vets for my Dog Maisy so it was just a glass of water before we went.  Afterwards I had my proper breakfast which was worth waiting for. 

I had quite a relaxed day after that and pottered about and then watched a film as Bizzy Badger was with his Dad today, like he is fortnightly on a Saturday, while Jay took his youngest Daughter shopping and out for lunch.  I also took the opportunity to have a little think about the meals for the rest of the day as it is a weekend and I finally had a chance for a hot lunch for a change.

Day 5



Is it possible to feel this good after only 5 days? Because I do.  I know this whole30 thing is taking over my blog at the moment but I thought it would be a good way for me to stay on track and it is.

Seriously though, I feel good because I am not hungry between meals but when I do eat it is very satisfying and furthermore the tastes have really changed for the better and that's quite exciting and that little sprinkle of salt is so tasty too.

So this is my first Friday and therefore my first Friday night! But all is well ... here's my day: -

Day 4



Day 4 has come and gone and I feel really, really good.

I don't feel hungry and I don't have cravings.  I felt a little cranky earlier but that subsided after breakfast and some fresh air. I have felt great ever since.  In fact, I think food is tasting different.  Different better. More flavour which is amazing.

Day 3



Day 3 and its all good.  Ok so my legs are a little heavy and I am slightly more tired than an average Wednesday but I am not craving the old foods and I feel really, really good.

I had another massively busy day but I still managed to get through another clean day and I even cooked the delicious chilli from The Clothes Make the Girl Blogger and author of 'Well Fed' and 'Well Fed 2' recipe books.  All are fab and the recipe is totally amazing.

So, Day 3 consisted of:

Day 2

Yay, day 2 and all is still well ... better actually than day one because I suppose I have another day under my belt and I made it.  Again not hungry only if I over shoot meal times which I did twice today as I have been super busy.

I spent the day at work and had a late (very late) lunch at 4pm and then went to Miss C (my Daughters) College for an open evening event and didn't eat Dinner until 9.45pm.  In normal circumstances I would neither do this or recommend this but sometimes you gotta do what you gotta do but at least I didn't cave in to the biscuits and vending machines (Yay me!) and I even took along a bag of chopped carrots to keep me going ... which they did.

The coconut (by the way) was a nightmare to crack but I eventually succeeded although lets just say I know how Tom Hanks felt in playing his character in Cast Away ....!

Sorry no photos as it was just a crazy day and I, unfortunately, have another crazy day tomorrow which I am not looking forward to BUT I am looking forward to Day 3.

Day 1




So, as promised I woke up eager to get going on the Whole30 and weighed and measured myself accordingly (just for the record) but that will be the last time for at least the 30 days. Hoping to stop another bad habit.

Its been a good day and I am pleased.  I had planned to blog all my meals but somehow scoffed lunch and dinner before I remembered! Whoops, sorry!  They probably aren't interesting enough anyway (yet!) because I am going a bit primitive to start with because that way I can build on it.  I haven't been starving but I have been hungry but only when it was time to have my meals anyway but this meant that I really enjoyed eating them which made them even more satisfying.

So today consisted of : -

Breakfast (as pictured above)

Hard Boiled Egg
Half a sliced advocado
A handful of cherry tomatoes

Lunch

Tuna
Gem Lettuce leaves
Half a sliced advocado
A handful of cherry tomatoes

Dinner

Beef steak
Sprouts
Carrots
Broccoli
Leeks

followed by

Melon and a sprinkle of plain cashew nuts (Looks plain but was surprisingly tasty and I loved the crunch factor).



Breakfast is always a tricky one because I am mostly running around to Bizzy B's rigid routine and as you can imagine he takes up all my energy and attention - not to mention the two dogs and the three chickens who I also have to sort out before work. So, I have to carefully manage a breakfast that conveniently wedges in between dropping Bizzy B off at School and starting work at 9.30 so it has to be a quick, nutritious and achievable plan ... much like a hard boiled egg etc etc.

I don't drink Tea and Coffee so I have drank a lot of water today (1 Litre at work and nearly twice that amount at home) and needless to say I have had to pee a lot!

I miss a cheeky Pepsi Max or two but I am feeling positive and I am ready and willing for Day 2 which is much the same for food with tweaks ... but watch this space to find out.

Day 0



I am ashamed to admit not only have I been a bad blogger after saying I would be a better one I am ... (from a health point of view) in a rather rubbish state.  Let me explain ...

Over two years ago I was in really good shape and great health.  I had a healthy outlook as some time before that I had made a really conscious decision to not eat anything out of a packet, nothing processed and I had been tee total for over 10 years!  I had an excellent BMI was fit as an ox and was  running half marathons.  Even the fact that my child was profoundly Autistic and barely slept didn't make me tired but now, sadly, over two years on I am 3 stone heavier and feeling more lethargic and rubbish than I have ever felt in my whole life.  I have literally stuffed my way through piles and piles of processed food and I even reintroduced alcohol.  What happened? ..... separation and pending divorce happened ..... oh and a house move, a new partner and a job on top! Ok, enough of the excuses but for far too long I have been feeling rubbish and in need to kick start myself then my best friend told me about Paleo which I felt was very similar to how I had eaten before with perhaps a bit more leniency. Originally I had eaten like a cave man after having some private nutritional tests for my son to see if he suffered any ill effects from his diet.  I basically wanted to find out if his Autism was allergy induced.It wasn't according to the data but they said if I wanted to maintain a healthy weight the best way would be to eat like a caveman to suit me. So I did.

Anyway today is day 0 and so tomorrow is the start of something new.  For 30 days I plan to make myself well again.
